Tibby’s Pavlova
6 egg whites (room temperature)
pinch salt
1 cup castor sugar (superfine sugar)
1/2 cup sugar
2 dessertspoons Fielders cornflour (corn starch)
2 teaspoons white vinegar
a little vanilla
Preheat oven to 205C
Beat egg whites with salt gradullay add castor sugar and sugar. When forming peaks add cornflour, vinegar and vanilla.
Plce on 2 sheets greaseproof paper on a scone tray.
Place in preheated oven and reduce to 120C. Cook 1 1/2 hours. Turn off oven and leave in oven till cold.
Tip: Make sure bowl and beaters are clean, not greasy.
