Mango Coconut Panna Cotta

Ingredients

  • 2 ripe mangoes
  • 500ml thickened cream
  • 500ml coconut cream
  • 1/3 cup caster sugar
  • 2 tbs boiling water
  • 1 tbs gelatine powder

Method

  1. Peal and chop mango and then place  in the jug of a blender and blend until smooth.
  2. Place the thickened cream, coconut cream and sugar in a medium saucepan over medium heat and cook, stirring, for 2-3 minutes or until heated through.
  3. Place the boiling water in a small bowl. Add the gelatine and whisk with a fork until gelatine dissolves.
  4. Add the mango puree to the cream mixture and strain through a fine sieve into a jug. Add the gelatine mixture to the cream mixture and stir to combine. Pour evenly into 6 ramekins. Cover and place in the fridge for 4-6 hours or until set.
