Chocolate Pudding (Self-Saucing)



100g unsalted butter

1/2 cup sugar

2 eggs

1 teaspoonn vanilla

1 cup self-raising flour

2 tablespoons cocoa

pinch of salt

3 tablespoons milk


1/2 cup sugar

1 tablespoon cocoa

1 1/2 cups boiling water

Cream together butter and sugar. Beat until it is pale and fluffy. Gradually beat in eggs and vanilla until completely combined.

In a separate bowl sift together flour, cocoa and salt. Fold this into the egg and sugar mixture. Alternate between dry ingredients and adding milk. Fold until completely combined. Place the pudding mixture in a greased ovenproof dish.

In a small bowl combine sugar and cocoa. Carefully sprinkle this across the top of the pudding mixture, spreading it evenly and gently over the top. Gently pour boiling water over the top until the sugar and cocoa mixture is completely covered.

Cook for 30 minutes in a 180C degree oven.

    ooh, I loved that as a child…wonder how that would taste with gluten free flour? think I’ll give it a try.
