Chocolate Cookie & Peanut Butter Sandwiches









250 grams unsalted butter

2 cups sugar

2 large eggs

1 teaspoon vanilla

2 cups self-rasing flour

1/2 cup dutch cocoa

pinch of salt


100 grams butter

2 cups icing sugar (confectioners sugar)

1 cup peanut butter

2 tablespoons water


Preheat oven to 350F degrees.

In a large bowl beat butter and sugar until light and fluffy. Add eggs one at a time, beating until completely combined. Beat in vanilla.

In separate bowl sift together flour, salt and cocoa. Add dry ingredients to the butter mixture, add small amounts at a time making sure each bit of flour was beaten in before adding more.

Spoon teaspoons of mixture onto greased cookie sheets, placing them far apart as cookies spread and flatten out. Cook for 9 minutes.

For the filling combine butter, icing sugar and peanut butter. Add water as necessary to get a smooth and spreadable consistency.

When cookies are cool, spread a heaped tablespoon of filling onto a cookie and roughly smoothed it out. Then press a second cookie down onto it making sure the filling didn’t overflow too much from the cookies.

Eat with chocolate milk!
