Sticky Plum Chicken


8 chicken drumsticks (any chicken you want really)
1/2 cup plum sauce
2 tablsp soy sauce
1 tablesp honey
1 teasp grated fresh ginger
2 cloves garlic, crushed
4 spring onions
1 tablesp oil
chillies to taste

Make 2 deep cuts in each drumstick.
Combine sauces, honey, garlic, chillies and spring onions in a bowl. Add drumsticks, turn to coat in marinade.
Cover, refrigerate for several hours or overnight. Turn occasionally.
Line a baking dish with foil. Brush with oil. Place drumsticks in a single layer in dish.
Cook in a preheated 200C oven for 1 hour or until cooked.

Pour the leftover marinade in a saucepan and reduce. Use for dipping.

Serve warm or cold with dipping sauce.

*Suitable for freezing.

    Plum and chicken…..I’ve been experimenting with a grape juice sauce to go with chicken but haven’t perfected it yet so it’s not on my blog. But plums and chicken are an interesting combination!!
