Spicy Tomato Chutney

3 pounds cherry tomatoes (halved)

1 cup red wine vinegar

2 cups apple cider vinegar

Tblespn cracked black pepper

1 tspn salt

2 cups sugar

2 red onions (diced)

10 thai chillies (finely chopped)

2 big chunks peeled fresh ginger

In a large pot  boil vinegars, pepper, salt, sugar, stirring until the sugar has melted. Add tomatoes, onions and chillies. Bring to a boil and add ginger. Simmer for 3 hours, stirring frequently. Remove ginger and put aside.

When cool spoon into jars or sealable containers.

Serve on sandwiches, with cheese or on burgers.
