Sausage Rolls 

Sausage Ingredients

600g mince (pork or beef works)

¾  cup breadcrumbs (homemade preferably – don’t use Krummies as they are too fine)

¾ cup tasty cheese

1 small onion, finely grated (ie pulped)

1 small carrot, finely grated

4 cloves garlic, crushed (use a crusher so garlic is finely minced)

3 pinches thyme

black pepper to taste

1 egg, beaten

Other ingredients

Light puff pastry (2 sheets will make approximately 8 large sausage rolls)

1 egg, beaten + little bit of milk (for glazing)

Preheat oven to 180 degrees and grease a baking tray. Mix all sausage ingredients together well.

Cut each pastry sheet in half. Spoon the mince lengthways on each piece. Brush the edges of the pastry on each side of the mince strip with egg/milk wash. Roll each strip firmly then brush the top with egg/milk wash.

Trim the ends if needed, then cut each long roll into size you want. Place on a greased oven tray. Bake for approximately 30 minutes or until golden brown. (Rearrange rolls on tray around halfway through cooking to ensure they bake evenly.)
