1 lb plain flour (450g)
5 eggs (3med, 2 lge)
1 capful olive oil
1/2 eggshell water
Tip flour onto the counter top and make large well in middle through to where you can see the counter. Add eggs, water and oil into well
mix gradually, drawing flour into the mixture. Be careful not to break the well wall. Use your hands to bring everything together. Don’t over knead.

Let stand for 30 minutes.

Break into smaller pieces. Roll through pasta maker using plenty of flour on surface.

Roll to second last notch.
