Ma’s Marinara

1 tablesp olive oil
1 medium onion, chopped
2 cloves garlic, crushed
1 x 425g can chopped tomatoes
1 x 140g tomato paste
2 tablesp chopped parsley
1/2 teasp salt
freshly ground pepper
1 tablesp chopped basil
1/4 dry white wine
250g green prawns, shelled with tail intact
250g scallops
500g spaghetti

Heat oil in a saucepan and sauté onion and garlic until softened.
Add tomatoes, paste, parsley, basil and wine.
Season with salt and pepper and simmer for 40 minutes.
Then toss in the seafood and simmer for another 5 minutes.
Pour sauce over cooked pasta and mix through before serving.

* I usually add more wine if sauce starts to dry out. Other herbs can be added also – eg: rosemary, oregano, bay leaf, thyme.
