Cheesy Bacon Bites with Plumb BBQ Sauce

Ingredients (makes 20 bites)

1 sheet puff pastry

6 rashers baacon

1 cup grated cheese (any you like)

1 egg

2 tablespoons ketchup

2 tablespoons smokey BBQ sauce

2 tablespoons sweet chili sauce

1/4 cup plum sauce

Roll out pastry and then  cut the sheet in half length ways. On each of the halves crumble crispy bacon down the centre. Bacon had been cooked and cooled earlier. Add the grated cheese on top of the bacon.

Roll pastry carefully to form a tube. Use a little water along the edge to seal it. Cut into bite size pieces and place on a greased cookie sheet. Be careful that you don’t loose all the filling as it falls out very easily. Brush with beaten egg to help brown.

Bake in a 400F degree oven for 15 minutes, until they were golden brown.

While these are cooking make the dipping sauce.  In a bowl combine all the ingredients and stir well.

Serve the bites warm with the sauce on the side.

These sound amazing!!! We are a bacon lovin’ family so I will definitely have to try this! One question though…what’s a rasher of bacon?
